From time to time, I’ll post some of my favorite recipes here.

Potato Soup

Both of my grandmothers made delicious potato soup.  We’d eat it with peanut butter sandwiches or peanut butter saltines on the side.  Some crazy members of my family would eat peanut butter and mayonnaise sandwiches on the side.  Ick!  Now, I often serve this soup with warm cheddar/garlic biscuits and my husband and children mix cheddar cheese in their soup.

5 lb. potatoes

approx. 1 cup instant potato flakes

salt and pepper to taste

1/4 – 1/2 gallon milk

1 small onion, chopped (or dried, minced onion to taste)

1 Tbsp. butter or margarine

a pinch or two of celery seed

Peel and dice potatoes, add salt and onion.  Cover with water and cook until potatoes are done but not mushy.  Drain some of the water off.

Add milk to potatoes — you decide the amount of milk based on how much soup you want & the consistency you want. 

Warm over low to medium heat, stirring frequently to prevent scorching.  

Add butter, salt, pepper, and celery seed.  Continue warming. 

Stir in potato flakes to thicken soup.  Continue warming.  

Eat!
